Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Add garlic, bay leaf, thyme, and split peas to the pot, stirring to combine.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 1 hour, or until peas are tender.
  4. Stir in the diced ham and cook for an additional 10-15 minutes. If the soup is too thick, add more broth or water to reach desired consistency.
  5. Remove bay leaf, season with salt and pepper to taste, and garnish with fresh parsley if desired.
