A hearty and comforting split pea soup made with tender ham and seasoned to perfection.

- 1 pound dried green split peas, rinsed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 6 cups low-sodium chicken broth
- 2 cups diced cooked ham
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Add garlic, bay leaf, thyme, and split peas to the pot, stirring to combine.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 1 hour, or until peas are tender.
- Stir in the diced ham and cook for an additional 10-15 minutes. If the soup is too thick, add more broth or water to reach desired consistency.
- Remove bay leaf, season with salt and pepper to taste, and garnish with fresh parsley if desired.
