Ingredients

  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 cup celery, chopped
  • 1 cup red bell pepper, chopped
  • 1/2 cup red onion, finely chopped
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Cook macaroni according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, and sugar. Mix well.
  3. Add the cooled macaroni, celery, red bell pepper, red onion, salt, and pepper to the bowl. Stir until everything is well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Garnish with fresh parsley if desired.
