A creamy and delicious macaroni salad that’s perfect for picnics, barbecues, and potlucks.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 cup celery, chopped
- 1 cup red bell pepper, chopped
- 1/2 cup red onion, finely chopped
- 1 tablespoon sugar
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (optional)
Instructions
- Cook macaroni according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, and sugar. Mix well.
- Add the cooled macaroni, celery, red bell pepper, red onion, salt, and pepper to the bowl. Stir until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh parsley if desired.
Notes
- Feel free to add other ingredients like hard-boiled eggs, pickles, or diced ham for variation.
- Macaroni salad can be made a day ahead of time to allow flavors to meld.
