Ingredients

  • 2 tablespoons Olive oil
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • 1/2 cup Marinara sauce
  • 1 cup Shredded mozzarella cheese
  • 1/2 cup Pepperoni slices

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchini into rounds and place them on a baking sheet lined with parchment paper.
  3. Brush the zucchini slices with olive oil and sprinkle with Italian seasoning and salt.
  4. Bake the zucchini in the preheated oven for 15-20 minutes until they are tender.
  5. Remove the zucchini from the oven and top each slice with marinara sauce, mozzarella cheese, and pepperoni if using.
  6. Return the baking sheet to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
