- 2 tablespoons Olive oil
- 1 teaspoon Italian seasoning

- 1 cup Shredded mozzarella cheese
- 1/2 cup Pepperoni slices
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchini into rounds and place them on a baking sheet lined with parchment paper.
- Brush the zucchini slices with olive oil and sprinkle with Italian seasoning and salt.
- Bake the zucchini in the preheated oven for 15-20 minutes until they are tender.
- Remove the zucchini from the oven and top each slice with marinara sauce, mozzarella cheese, and pepperoni if using.
- Return the baking sheet to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving with extra marinara sauce for dipping.
