Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Dip each zucchini slice into the beaten egg, ensuring it is fully coated, then dredge it in the Parmesan mixture, pressing lightly to adhere.
- Place the coated zucchini slices on the prepared baking sheet in a single layer.
- Spray the tops lightly with olive oil spray for extra crispiness.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through.
