- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated parmesan cheese
- 1 large egg
- 2 green onions, chopped
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Oil for frying
Instructions
- Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
- After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchinis.
- In a mixing bowl, combine the grated zucchini, flour, parmesan cheese, egg, green onions, black pepper, and garlic powder. Mix well.
- Heat oil in a frying pan over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture and flatten it into a patty. Carefully place it into the hot oil.
- Fry for about 3-4 minutes on each side or until golden brown.
- Remove the fritters from the pan and place them on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- For extra flavor, add herbs like parsley or dill to the mixture.
- Make sure the oil is hot enough before adding the fritters to prevent them from becoming soggy.
- These fritters can be baked in the oven at 400°F for 20 minutes, flipping halfway through for a healthier option.
