Ingredients

  • 1 large egg
  • 2 green onions, chopped

  • 1/4 teaspoon garlic powder
  • Oil for frying

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  2. After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchinis.
  3. In a mixing bowl, combine the grated zucchini, flour, parmesan cheese, egg, green onions, black pepper, and garlic powder. Mix well.
  4. Heat oil in a frying pan over medium heat.
  5. Scoop about 2 tablespoons of the zucchini mixture and flatten it into a patty. Carefully place it into the hot oil.
  6. Fry for about 3-4 minutes on each side or until golden brown.
  7. Remove the fritters from the pan and place them on paper towels to drain excess oil.
  8. Serve warm with your favorite dipping sauce.
