Description
Deliciously crispy zucchini corn fritters served with a refreshing herb dipping sauce. Perfect as an appetizer or snack!

- 2 medium zucchini, grated and excess moisture squeezed out
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 large eggs, beaten
- 1/4 cup chopped green onions
- 2 tablespoons olive oil, for frying
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated zucchini, corn kernels, flour, cornmeal, baking powder, salt, black pepper, and garlic powder.
- Add the beaten eggs and green onions to the mixture, stirring until well combined.
- Heat olive oil in a skillet over medium heat. Scoop about 1/4 cup of the mixture and flatten it slightly into a patty. Place in the skillet and fry for about 3-4 minutes on each side, or until golden brown.
- Repeat with the remaining mixture, adding more oil as necessary.
- For the herb dipping sauce, in a small bowl, mix together Greek yogurt, dill, parsley, lemon juice, salt, and pepper to taste.
- Serve the fritters warm with the herb dipping sauce on the side.
Notes
- Make sure to squeeze out as much moisture from the zucchini as possible to ensure crispy fritters.
- These fritters can be made ahead of time and reheated in the oven for a few minutes.
