Deliciously crispy zucchini corn fritters served with a refreshing herb dipping sauce. Perfect as an appetizer or snack!


Ingredients

  • 2 medium zucchini, grated and excess moisture squeezed out
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil, for frying
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the grated zucchini, corn kernels, flour, cornmeal, baking powder, salt, black pepper, and garlic powder.
  2. Add the beaten eggs and green onions to the mixture, stirring until well combined.
  3. Heat olive oil in a skillet over medium heat. Scoop about 1/4 cup of the mixture and flatten it slightly into a patty. Place in the skillet and fry for about 3-4 minutes on each side, or until golden brown.
  4. Repeat with the remaining mixture, adding more oil as necessary.
  5. For the herb dipping sauce, in a small bowl, mix together Greek yogurt, dill, parsley, lemon juice, salt, and pepper to taste.
  6. Serve the fritters warm with the herb dipping sauce on the side.

Notes

  • Make sure to squeeze out as much moisture from the zucchini as possible to ensure crispy fritters.
  • These fritters can be made ahead of time and reheated in the oven for a few minutes.
