- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup fresh raspberries
- White chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
- Melt the white chocolate chips in a microwave-safe bowl, then fold into the batter along with the raspberry puree.
- Pour the batter evenly into the prepared cake pans. Gently fold in the fresh raspberries.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Once cooled, frost with your favorite white chocolate frosting and garnish with white chocolate shavings and additional raspberries.
Notes
- For added flavor, you can mix some raspberry puree into the frosting.
- This cake can be made ahead of time and stored in the refrigerator for a few days.
