- 2 pounds of Yukon Gold potatoes, peeled and cubed
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- Salt to taste

Instructions
- Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
- Reduce heat to medium and simmer until potatoes are tender, about 15-20 minutes. Drain well.
- In a small saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, until the butter turns golden brown and has a nutty aroma, about 5-7 minutes. Remove from heat.
- In a large mixing bowl, combine the drained potatoes with the brown butter and heavy cream. Use a potato masher or an electric mixer to whip the potatoes until smooth and creamy.
- Season with salt and freshly ground black pepper to taste.
- Transfer the whipped potatoes to a serving bowl and garnish with chopped chives or parsley if desired.
