- 4 cups watermelon, diced
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced watermelon, cucumber, red onion, red bell pepper, cilantro, and jalapeño.
- Add the lime juice and gently toss to combine.
- Season with salt and pepper to taste.
- Let the salsa sit for about 10 minutes to allow the flavors to meld.
- Serve chilled with tortilla chips, or as a topping for grilled meats.
