A refreshing twist on the classic mojito, this Watermelon Mojito is perfect for summer gatherings and hot days. Enjoy the sweet, juicy flavor of watermelon combined with fresh mint and lime for a delicious cocktail.

- 2 cups watermelon, cubed and seeds removed
- 10 fresh mint leaves
- 1 lime, juiced
- 2 tablespoons sugar (or to taste)
- 1/2 cup white rum
- 1 cup club soda
- Ice cubes
- Mint sprigs and watermelon wedges for garnish
Instructions
- In a blender, puree the watermelon until smooth. Strain through a fine mesh sieve into a bowl to remove pulp, if desired.
- In a large glass or cocktail shaker, muddle the mint leaves and sugar together until the mint is fragrant.
- Add the lime juice and watermelon puree to the glass or shaker. Stir to combine.
- Add the white rum and mix well.
- Fill a glass with ice cubes and pour the watermelon mixture over the ice.
- Top with club soda and stir gently to combine.
- Garnish with mint sprigs and watermelon wedges before serving.
Notes
- For a non-alcoholic version, omit the rum and replace it with additional club soda or lemonade.
- Adjust the sweetness by adding more or less sugar according to your taste.
