Ingredients

- 4 cups watermelon, diced
- 2 cups cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced watermelon, cucumber, red onion, feta cheese, and mint leaves.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Drizzle the dressing over the salad and gently toss to combine.
- Serve chilled or at room temperature.
Notes
- For added flavor, you can sprinkle some chili powder on top before serving.
