Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Preheat your waffle iron according to manufacturer’s instructions.
- Pour the recommended amount of batter into the waffle iron and cook until golden brown. Repeat with remaining batter.
- For the berry compote, in a saucepan over medium heat, combine the mixed berries, sugar, and lemon juice.
- Cook, stirring occasionally, until the berries break down and the mixture thickens, about 5-10 minutes.
- Serve the waffles warm, topped with the berry compote.
