- 1 bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1 cup cherry tomatoes
- 1 cup mushrooms, whole
- 1 cup firm tofu, cubed
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, combine soy sauce, olive oil, maple syrup, balsamic vinegar, garlic powder, smoked paprika, salt, and pepper. Whisk until well blended.
- Add the cubed tofu and vegetables to the marinade. Toss to coat well and let sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated tofu and vegetables onto skewers, alternating between them for a colorful presentation.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and serve warm, drizzled with any remaining marinade.
