  • 1 cup cherry tomatoes
  • 1 cup mushrooms, whole
  • 1 cup firm tofu, cubed
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, combine soy sauce, olive oil, maple syrup, balsamic vinegar, garlic powder, smoked paprika, salt, and pepper. Whisk until well blended.
  2. Add the cubed tofu and vegetables to the marinade. Toss to coat well and let sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated tofu and vegetables onto skewers, alternating between them for a colorful presentation.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
