- 1/4 cup molasses
- 1 tablespoon almond milk

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, mix the melted coconut oil, brown sugar, molasses, almond milk, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thick and cut into desired shapes.
- Place the cookies on the prepared baking sheet and bake for 8-10 minutes.
- Allow the cookies to cool completely before decorating with vegan icing or enjoying plain.
