Ingredients

  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 tablespoon almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the melted coconut oil, brown sugar, molasses, almond milk, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick and cut into desired shapes.
  6. Place the cookies on the prepared baking sheet and bake for 8-10 minutes.
  7. Allow the cookies to cool completely before decorating with vegan icing or enjoying plain.

Notes

  • For a more festive touch, use vegan royal icing for decorating.
