These Ube Crinkle Cookies are soft, chewy, and packed with the unique flavor of ube. The vibrant purple color and powdered sugar coating make them a delightful treat!

- 1 cup ube puree
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the ube puree, eggs, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the cookie dough in the refrigerator for at least 30 minutes.
- Using a cookie scoop, scoop out balls of dough and roll them in powdered sugar until fully coated.
- Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the cookies are set around the edges but still soft in the center.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For best results, use fresh ube puree. You can find it in Asian grocery stores or make your own by steaming and mashing ube.
- If the dough is too sticky to handle, chill it for an additional 15-20 minutes.
