Description

These twice baked potatoes are crispy on the outside and creamy on the inside, made easy with the air fryer! Perfect as a side dish or a hearty snack.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup cooked bacon bits
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes, then poke holes all over with a fork. Brush with olive oil and sprinkle with salt.
  3. Place the potatoes in the air fryer basket and cook for 35-40 minutes, until tender.
  4. Once cooked, remove the potatoes and let cool slightly. Cut each potato in half lengthwise and scoop out the insides into a bowl, leaving a small border around the skin.
  5. In the bowl with the potato insides, add shredded cheddar cheese, sour cream, milk, bacon bits, and half of the green onions. Mix until well combined and creamy. Season with salt and pepper to taste.
  6. Spoon the potato mixture back into the potato skins, packing it in slightly.
  7. Return the stuffed potato halves to the air fryer and cook at 400°F (200°C) for an additional 10-12 minutes, until the tops are golden brown.
  8. Remove from the air fryer and sprinkle with remaining green onions before serving.

Notes

  • You can customize the filling by adding other ingredients like garlic powder, chives, or different types of cheese.
  • For a healthier version, consider using Greek yogurt instead of sour cream.
