- 1 package of Trader Joe’s cauliflower gnocchi
- 1 jar of Trader Joe’s pesto
- 1 cup of cherry tomatoes
- 1 cup of spinach
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the cauliflower gnocchi according to package instructions.
- In a separate pan, heat a little olive oil over medium heat.
- Add cherry tomatoes and spinach, sauté until spinach is wilted.
- Mix in the cooked gnocchi and pesto.
- Stir in Parmesan cheese and season with salt and pepper.
- Serve hot and enjoy.
