Ingredients

  • 8 ounces rice noodles
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • 1/2 cup chopped green onions
  • 1/2 cup peanuts, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, combine the cooked noodles, shredded carrots, bell pepper, cucumber, red cabbage, green onions, peanuts, and cilantro.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, and sriracha until smooth.
  4. Pour the dressing over the noodle salad and toss to combine. Season with salt and pepper to taste.
  5. Serve immediately or refrigerate for up to 2 hours before serving.
