A refreshing and flavorful Thai Peanut Noodle Salad that’s easy to make and perfect for any meal.

- 8 ounces rice noodles
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cup cucumber, thinly sliced
- 1 cup red cabbage, shredded
- 1/2 cup chopped green onions
- 1/2 cup peanuts, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon sriracha (optional)
- Salt and pepper to taste
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop cooking.
- In a large bowl, combine the cooked noodles, shredded carrots, bell pepper, cucumber, red cabbage, green onions, peanuts, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, and sriracha until smooth.
- Pour the dressing over the noodle salad and toss to combine. Season with salt and pepper to taste.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
- Feel free to add grilled chicken, shrimp, or tofu for extra protein.
- This salad can be made ahead of time; just keep the dressing separate until ready to serve.
