Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup tequila
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a mixing bowl, combine tequila, lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  5. Remove from the grill and let the chicken rest for a few minutes before slicing.
  6. Garnish with fresh cilantro and serve with lime wedges.
