  • 4 medium sweet potatoes, peeled and cut into cubes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and cayenne pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, flipping halfway through.
  5. While the sweet potatoes are roasting, whisk together tahini, lemon juice, and water in a small bowl until smooth. Adjust consistency with more water if necessary.
  6. Once sweet potatoes are done, remove from the oven and drizzle with tahini sauce.
  7. Garnish with chopped parsley and serve warm.
