- 4 medium sweet potatoes, peeled and cut into cubes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and cayenne pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, flipping halfway through.
- While the sweet potatoes are roasting, whisk together tahini, lemon juice, and water in a small bowl until smooth. Adjust consistency with more water if necessary.
- Once sweet potatoes are done, remove from the oven and drizzle with tahini sauce.
- Garnish with chopped parsley and serve warm.
