- 8 oz rotini pasta
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/2 cup red onion, diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse with cold water. Set aside.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Add the taco seasoning to the meat along with the recommended amount of water as per the seasoning package. Stir and let simmer until thickened.
- In a large mixing bowl, combine the cooked pasta, seasoned meat, cherry tomatoes, corn, black beans, red bell pepper, red onion, and cheddar cheese.
- In a small bowl, whisk together the sour cream, mayonnaise, lime juice, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.
- Garnish with fresh cilantro if desired. Serve immediately or refrigerate for 30 minutes to let flavors meld.
Notes
- Feel free to add additional toppings such as avocado or jalapeños for extra flavor.
- This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
