  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse with cold water. Set aside.
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
  3. Add the taco seasoning to the meat along with the recommended amount of water as per the seasoning package. Stir and let simmer until thickened.
  4. In a large mixing bowl, combine the cooked pasta, seasoned meat, cherry tomatoes, corn, black beans, red bell pepper, red onion, and cheddar cheese.
  5. In a small bowl, whisk together the sour cream, mayonnaise, lime juice, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.
  6. Garnish with fresh cilantro if desired. Serve immediately or refrigerate for 30 minutes to let flavors meld.
