Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado
  • 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. Toss the sweet potatoes with olive oil, salt, pepper, and paprika.
  4. Spread the sweet potatoes on a baking sheet.
  5. Bake for 25-30 minutes until tender.
  6. In a bowl, combine black beans and corn.
  7. Once sweet potatoes are done, let them cool.
  8. Prepare meal prep containers with sweet potatoes, black beans, and corn mix.
  9. Top with sliced avocado and a squeeze of lime.
  10. Garnish with fresh cilantro.
