Ingredients

- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 avocado
- 1 lime
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- Toss the sweet potatoes with olive oil, salt, pepper, and paprika.
- Spread the sweet potatoes on a baking sheet.
- Bake for 25-30 minutes until tender.
- In a bowl, combine black beans and corn.
- Once sweet potatoes are done, let them cool.
- Prepare meal prep containers with sweet potatoes, black beans, and corn mix.
- Top with sliced avocado and a squeeze of lime.
- Garnish with fresh cilantro.
Notes
- Store in the fridge for up to 5 days.
- Reheat in the microwave before serving.
