- 2 large sweet potatoes (peeled and cubed)
- 1 pound ground beef (85% lean recommended)
- 2 tablespoons olive oil (for cooking)
- 2 cloves garlic (minced)
- 1 medium onion (diced)
- 1 large bell pepper (diced)
- 1 teaspoon cumin (ground)

- to taste black pepper
- for garnish green onions (chopped)
- 1 large avocado (sliced (optional))
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until tender.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened.
- Add the minced garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Stir in the cumin, salt, and pepper.
- Once the beef is cooked through, combine it with the roasted sweet potatoes in a large bowl.
- Serve the beef and sweet potato mixture in bowls, garnished with chopped green onions and avocado slices, if desired.
