Ingredients

  • 2 large sweet potatoes (peeled and cubed)
  • 1 pound ground beef (85% lean recommended)
  • 2 tablespoons olive oil (for cooking)
  • 2 cloves garlic (minced)
  • 1 medium onion (diced)
  • 1 large bell pepper (diced)
  • 1 teaspoon cumin (ground)
  • to taste salt
  • to taste black pepper
  • for garnish green onions (chopped)
  • 1 large avocado (sliced (optional))

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until tender.
  3. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Stir in the cumin, salt, and pepper.
  6. Once the beef is cooked through, combine it with the roasted sweet potatoes in a large bowl.
  7. Serve the beef and sweet potato mixture in bowls, garnished with chopped green onions and avocado slices, if desired.
