This delicious Sun-Dried Tomato and Spinach Stuffed Chicken recipe is perfect for a weeknight dinner. Juicy chicken breasts are filled with a flavorful mixture of sun-dried tomatoes, spinach, cream cheese, and mozzarella cheese.

- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, sun-dried tomatoes, cream cheese, mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Using a sharp knife, create a pocket in each chicken breast. Be careful not to cut all the way through.
- Stuff each chicken breast with the spinach and sun-dried tomato mixture. Secure with toothpicks if necessary.
- In an oven-safe skillet, heat the olive oil over medium heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let rest for a few minutes, and then serve.
Notes
- You can substitute fresh spinach with frozen spinach, just make sure to thaw and drain it well.
- Feel free to add other herbs and spices to the stuffing mixture for extra flavor.
