  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, sun-dried tomatoes, cream cheese, mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Using a sharp knife, create a pocket in each chicken breast. Be careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach and sun-dried tomato mixture. Secure with toothpicks if necessary.
  5. In an oven-safe skillet, heat the olive oil over medium heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

  • You can substitute fresh spinach with frozen spinach, just make sure to thaw and drain it well.
