Instructions
- Preheat the grill to medium heat.
- In a large bowl, combine zucchini, bell pepper, red onion, cherry tomatoes, and mushrooms.
- In a small bowl, whisk together olive oil, garlic powder, salt, and pepper.
- Pour the olive oil mixture over the vegetables and toss to coat evenly.
- Thread the vegetables onto skewers, alternating types for a colorful presentation.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred.
- Remove from grill and let cool slightly.
- Garnish with fresh basil before serving.
