Instructions
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, cooked quinoa, avocado, and chickpeas.
- Drizzle with olive oil and balsamic vinegar, then toss gently to combine.
- Sprinkle feta cheese on top and season with salt and pepper to taste.
- Serve immediately or refrigerate for up to an hour before serving.
