Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season with salt and pepper.
  3. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for 5 minutes.
  4. While the chicken is resting, prepare the salad by combining salad greens, cherry tomatoes, cucumber, bell pepper, avocado, red onion, and feta cheese in a large bowl.
  5. Slice the grilled chicken and place on top of the salad.
