Ingredients

- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, diced
- 1 avocado, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for 5 minutes.
- While the chicken is resting, prepare the salad by combining salad greens, cherry tomatoes, cucumber, bell pepper, avocado, red onion, and feta cheese in a large bowl.
- Slice the grilled chicken and place on top of the salad.
- Drizzle balsamic vinaigrette over the salad and toss gently to combine.
- Serve immediately.
