Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Add chicken breasts to the marinade, cover, and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, toss the sliced vegetables in olive oil, salt, and pepper.
  5. Grill the marinated chicken for 6-7 minutes on each side, or until fully cooked.
  6. During the last few minutes of cooking, add the vegetables to the grill and cook until tender.
  7. Serve the grilled chicken alongside the summer veggies, garnished with fresh parsley.
