This Summer Berry Crumble is a delightful dessert that combines fresh berries with a crunchy, buttery topping. Perfect for summer gatherings or as a sweet treat any day of the week!

- 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mixed berries, granulated sugar, cornstarch, and vanilla extract. Toss gently to coat the berries evenly.
- Pour the berry mixture into a greased 9-inch baking dish.
- In another bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Stir until well mixed.
- Drizzle the melted butter over the oat mixture and stir until crumbly.
- Sprinkle the oat mixture evenly over the berry layer in the baking dish.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the berries are bubbling.
- Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature, optionally with ice cream!
Notes
- Feel free to use any combination of berries you like or have on hand.
- For added flavor, you can mix in a tablespoon of lemon juice with the berries.
