  • 12 Medjool dates, pitted
  • 1/2 cup almond butter
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil (optional)
  • Sea salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) if you prefer warm dates.
  2. Carefully slice each date lengthwise on one side to create an opening, being careful not to cut all the way through.
  3. Fill each date with about 1 teaspoon of almond butter, adjusting to your taste.
  4. In a microwave-safe bowl, combine dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth.
  5. Dip each stuffed date into the melted chocolate or drizzle the chocolate over the dates using a spoon.
  6. Place the chocolate-covered dates on a baking sheet lined with parchment paper.
  7. Sprinkle a tiny pinch of sea salt on each date if desired.
  8. Refrigerate the dates for about 30 minutes, or until the chocolate is set. Alternatively, you can enjoy them warm if you heated them in the oven.
