Deliciously sweet and satisfying, these stuffed dates are filled with creamy almond butter and topped with rich dark chocolate for a perfect treat.

- 12 Medjool dates, pitted
- 1/2 cup almond butter
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil (optional)
- Sea salt, for sprinkling (optional)
Instructions
- Preheat your oven to 350°F (175°C) if you prefer warm dates.
- Carefully slice each date lengthwise on one side to create an opening, being careful not to cut all the way through.
- Fill each date with about 1 teaspoon of almond butter, adjusting to your taste.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Dip each stuffed date into the melted chocolate or drizzle the chocolate over the dates using a spoon.
- Place the chocolate-covered dates on a baking sheet lined with parchment paper.
- Sprinkle a tiny pinch of sea salt on each date if desired.
- Refrigerate the dates for about 30 minutes, or until the chocolate is set. Alternatively, you can enjoy them warm if you heated them in the oven.
Notes
- You can use any nut butter of your choice if you prefer.
- For a different flavor, try adding a sprinkle of cinnamon or a dash of vanilla extract to the almond butter.
- These stuffed dates can be stored in an airtight container in the fridge for up to a week.
