  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes, drained
  • 1/2 cup onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Drizzle the insides with olive oil and place them upright in a baking dish.
  3. In a skillet over medium heat, add the ground beef or turkey and cook until browned. Drain excess fat.
  4. Add the chopped onion to the skillet and sauté until translucent. Then, stir in the cooked rice, drained diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  5. Mix well until all ingredients are combined and heated through.
  6. Spoon the meat and rice mixture into each bell pepper, pressing down gently to pack it in.
  7. Top each stuffed pepper with shredded cheese.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley if desired and serve hot.

  • You can substitute quinoa for rice for a healthier option.
