- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes, drained
- 1/2 cup onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Drizzle the insides with olive oil and place them upright in a baking dish.
- In a skillet over medium heat, add the ground beef or turkey and cook until browned. Drain excess fat.
- Add the chopped onion to the skillet and sauté until translucent. Then, stir in the cooked rice, drained diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
- Mix well until all ingredients are combined and heated through.
- Spoon the meat and rice mixture into each bell pepper, pressing down gently to pack it in.
- Top each stuffed pepper with shredded cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley if desired and serve hot.
Notes
- Feel free to customize the filling with your favorite ingredients, such as black beans, corn, or spices.
- You can substitute quinoa for rice for a healthier option.
- Leftover stuffed peppers can be stored in the refrigerator for up to 3 days.
