A classic strawberry shortcake made with fresh strawberries, whipped cream, and tender biscuits.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream, plus more for serving
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine the sliced strawberries and sugar. Toss to coat and set aside to macerate for about 15-20 minutes.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Add the heavy cream and vanilla extract, stirring until just combined.
  6. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round.
  7. Using a biscuit cutter, cut out rounds and place them on a baking sheet.
  8. Bake for 12-15 minutes until golden brown.
  9. Let the biscuits cool slightly, then slice them in half horizontally.
  10. Layer with macerated strawberries and whipped cream. Top with the other half of the biscuit and more whipped cream.

Notes

  • You can substitute the heavy cream with coconut cream for a dairy-free option.
  • Try adding a splash of lemon juice to the strawberries for extra flavor.
