Description
A classic strawberry shortcake made with fresh strawberries, whipped cream, and tender biscuits.
Ingredients
Scale
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 1 cup heavy cream, plus more for serving
- 1 teaspoon vanilla extract
- Whipped cream for serving
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, combine the sliced strawberries and sugar. Toss to coat and set aside to macerate for about 15-20 minutes.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the heavy cream and vanilla extract, stirring until just combined.
- Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round.
- Using a biscuit cutter, cut out rounds and place them on a baking sheet.
- Bake for 12-15 minutes until golden brown.
- Let the biscuits cool slightly, then slice them in half horizontally.
- Layer with macerated strawberries and whipped cream. Top with the other half of the biscuit and more whipped cream.
Notes
- You can substitute the heavy cream with coconut cream for a dairy-free option.
- Try adding a splash of lemon juice to the strawberries for extra flavor.
