- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- 1/4 cup spinach puree (for green color)
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, melted butter, vanilla extract, and spinach puree until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Using a shamrock cookie cutter, pour the pancake batter into the shape of a shamrock on the skillet.
- Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, greasing the skillet as needed.
- Serve warm with maple syrup, whipped cream, or your favorite toppings.
Notes
- For a more vibrant green color, add more spinach puree.
- These pancakes can be made ahead of time and reheated in the toaster or microwave.
