Ingredients

  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup spinach puree (for green color)
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, vanilla extract, and spinach puree until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Using a shamrock cookie cutter, pour the pancake batter into the shape of a shamrock on the skillet.
  6. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, greasing the skillet as needed.
  8. Serve warm with maple syrup, whipped cream, or your favorite toppings.

Notes

  • For a more vibrant green color, add more spinach puree.
  • These pancakes can be made ahead of time and reheated in the toaster or microwave.
