- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 2 cups beef broth
- 1 cup Guinness beer
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides, about 5-7 minutes.
- Add the chopped onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the carrots and potatoes, then add the beef broth, Guinness beer, tomato paste, Worcestershire sauce, thyme, and rosemary.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
