  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 2 cups beef broth
  • 1 cup Guinness beer
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides, about 5-7 minutes.
  2. Add the chopped onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the carrots and potatoes, then add the beef broth, Guinness beer, tomato paste, Worcestershire sauce, thyme, and rosemary.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.
