  • 1 1/2 cups warm water
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 cup spinach puree (blanched and blended)
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine the sourdough starter and warm water. Mix well.
  2. Add the spinach puree and olive oil to the mixture, stirring until well combined.
  3. In a separate bowl, whisk together the flour, salt, and sugar.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.
  5. Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
  6. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 4-6 hours, or until doubled in size.
  7. Once risen, punch down the dough and shape it into a loaf. Place it in a greased loaf pan.
  8. Cover and let it rise again for 1-2 hours, or until it has risen slightly above the edge of the pan.
  9. Preheat your oven to 450°F (232°C).
  10. Bake the bread for 30-35 minutes, or until the crust is golden brown and sounds hollow when tapped.
  11. Remove from the oven and let cool on a wire rack before slicing.
