- 1 cup sourdough starter, fed and bubbly
- 1 1/2 cups warm water
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 cup spinach puree (blanched and blended)
- 1 tablespoon olive oil
Instructions
- In a large bowl, combine the sourdough starter and warm water. Mix well.
- Add the spinach puree and olive oil to the mixture, stirring until well combined.
- In a separate bowl, whisk together the flour, salt, and sugar.
- Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.
- Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 4-6 hours, or until doubled in size.
- Once risen, punch down the dough and shape it into a loaf. Place it in a greased loaf pan.
- Cover and let it rise again for 1-2 hours, or until it has risen slightly above the edge of the pan.
- Preheat your oven to 450°F (232°C).
- Bake the bread for 30-35 minutes, or until the crust is golden brown and sounds hollow when tapped.
- Remove from the oven and let cool on a wire rack before slicing.

- For an extra festive touch, sprinkle sesame seeds or poppy seeds on top before baking.
