Description
This royal icing recipe is perfect for decorating cookies and other treats for St. Patrick’s Day. It dries hard and can be easily colored to suit your festive designs.

- 4 cups powdered sugar
- 3 tablespoons meringue powder
- 5–6 tablespoons warm water
- Food coloring (green and gold recommended)
- Lemon juice (optional, for flavor)
Instructions
- In a large mixing bowl, sift the powdered sugar to remove any lumps.
- Add the meringue powder and mix together.
- Gradually add warm water, one tablespoon at a time, mixing on low speed until the icing is smooth and shiny.
- Increase the mixer speed to medium and beat for about 5 minutes until stiff peaks form.
- If using, add a few drops of lemon juice for flavor and mix well.
- Divide the icing into separate bowls and add food coloring as desired to create different colors for decorating.
- Use immediately, or store in an airtight container to prevent it from drying out.
Notes
- To achieve different consistencies, adjust the amount of water: use less for piping and more for flooding.
- Keep royal icing covered with a damp cloth when not in use to prevent it from hardening.
- For St. Patrick’s Day designs, consider using green and gold food coloring for festive decorations.
