Instructions

  1. In a mixing bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until the dough forms.
  5. Divide the dough in half, flatten into discs, wrap in plastic, and refrigerate for at least 1 hour.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the dough to about 1/4 inch thick. Use cookie cutters to cut out shapes.
  8. Place cookies on the prepared baking sheets and bake for 8-10 minutes, or until edges are lightly golden.
  9. Allow cookies to cool completely on a wire rack before decorating.
