Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup buttermilk
  • 1 cup mint chocolate chips
  • For frosting:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup unsweetened cocoa powder
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Green food coloring (optional)
  • Green sprinkles for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the softened butter, eggs, vanilla extract, peppermint extract, and buttermilk to the dry ingredients. Beat with an electric mixer on medium speed until well combined.
  4. Fold in the mint chocolate chips gently.
  5. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool completely on a wire rack.
  8. For the frosting, beat the softened butter and cocoa powder together in a bowl until smooth.
  9. Gradually add the powdered sugar and milk, beating until the frosting is fluffy. Add vanilla extract and green food coloring, if desired.
  10. Frost the cooled cupcakes with the chocolate frosting and decorate with green sprinkles.

Notes

  • For a more intense mint flavor, consider adding extra peppermint extract to the batter or frosting.
  • These cupcakes can be made a day in advance and stored in an airtight container.
