- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Green food coloring (optional)
- Green sprinkles for decoration
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the softened butter, eggs, vanilla extract, peppermint extract, and buttermilk to the dry ingredients. Beat with an electric mixer on medium speed until well combined.
- Fold in the mint chocolate chips gently.
- Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely on a wire rack.
- For the frosting, beat the softened butter and cocoa powder together in a bowl until smooth.
- Gradually add the powdered sugar and milk, beating until the frosting is fluffy. Add vanilla extract and green food coloring, if desired.
- Frost the cooled cupcakes with the chocolate frosting and decorate with green sprinkles.
Notes
- For a more intense mint flavor, consider adding extra peppermint extract to the batter or frosting.
- These cupcakes can be made a day in advance and stored in an airtight container.
