- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup corn kernels, frozen or canned
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 bunch green onions, sliced
- Tortilla chips for serving
Instructions
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the chopped onion and garlic to the skillet and sauté until softened.
- Stir in the kidney beans, diced tomatoes, corn, and taco seasoning. Cook for 5-7 minutes, until heated through.
- Transfer the mixture to a serving dish. Top with shredded cheddar cheese.
- Serve hot with tortilla chips on the side. Garnish with sour cream and sliced green onions.
Notes
- You can make this dish vegetarian by substituting the ground beef with a meat alternative.
- Add some diced jalapeños for an extra kick.
