Ingredients

  • 4 pounds corned beef brisket
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 6 cups water
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 1 medium head green cabbage, cut into wedges
  • 6 large carrots, peeled and cut into chunks
  • 8 medium potatoes, peeled and quartered
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine corned beef, onion, garlic, water, peppercorns, and bay leaves. Bring to a boil over medium-high heat.
  2. Reduce heat to low and cover. Simmer for about 2.5 to 3 hours, or until the meat is tender.
  3. Add potatoes and carrots to the pot, cover, and cook for an additional 20 minutes.
  4. Add cabbage wedges on top of the vegetables, cover, and cook for another 15 minutes, or until cabbage is tender.
  5. Remove the corned beef from the pot and let it rest for a few minutes before slicing against the grain.
  6. Serve the sliced corned beef with cabbage, potatoes, and carrots. Garnish with fresh parsley.
