- 4 pounds corned beef brisket
- 1 large onion, quartered
- 4 cloves garlic, minced
- 6 cups water
- 1 teaspoon black peppercorns
- 2 bay leaves
- 1 medium head green cabbage, cut into wedges
- 6 large carrots, peeled and cut into chunks
- 8 medium potatoes, peeled and quartered
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine corned beef, onion, garlic, water, peppercorns, and bay leaves. Bring to a boil over medium-high heat.
- Reduce heat to low and cover. Simmer for about 2.5 to 3 hours, or until the meat is tender.
- Add potatoes and carrots to the pot, cover, and cook for an additional 20 minutes.
- Add cabbage wedges on top of the vegetables, cover, and cook for another 15 minutes, or until cabbage is tender.
- Remove the corned beef from the pot and let it rest for a few minutes before slicing against the grain.
- Serve the sliced corned beef with cabbage, potatoes, and carrots. Garnish with fresh parsley.
