Celebrate St. Patrick’s Day with these festive green marshmallows that are perfect for decorating desserts or enjoying on their own!


Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 tablespoons gelatin powder
  • 1/2 cup cold water
  • 1 teaspoon vanilla extract
  • Green food coloring
  • Powdered sugar for dusting

Instructions

  1. In a small bowl, combine gelatin and cold water. Let it sit to bloom for about 5 minutes.
  2. In a saucepan over medium heat, combine granulated sugar, corn syrup, and water. Stir until sugar dissolves.
  3. Bring mixture to a boil without stirring. Use a candy thermometer to heat to 240°F (soft ball stage).
  4. Remove from heat and add the bloomed gelatin to the saucepan, stirring until fully dissolved.
  5. Add vanilla extract and green food coloring to desired color intensity, stirring to combine.
  6. Pour mixture into a greased 9×9 inch baking dish. Let it sit at room temperature for 4-6 hours, or until set.
  7. Once set, dust a cutting board with powdered sugar. Invert the marshmallow onto the board and cut into squares.
  8. Dust the cut sides with more powdered sugar to prevent sticking. Enjoy your festive St. Patrick’s Day marshmallows!

Notes

  • For extra flavor, consider adding peppermint extract instead of vanilla.
  • These marshmallows can be stored in an airtight container for up to 2 weeks.
