Celebrate St. Patrick’s Day with these festive green marshmallows that are perfect for decorating desserts or enjoying on their own!
Ingredients

- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 2 tablespoons gelatin powder
- 1/2 cup cold water
- 1 teaspoon vanilla extract
- Green food coloring
- Powdered sugar for dusting
Instructions
- In a small bowl, combine gelatin and cold water. Let it sit to bloom for about 5 minutes.
- In a saucepan over medium heat, combine granulated sugar, corn syrup, and water. Stir until sugar dissolves.
- Bring mixture to a boil without stirring. Use a candy thermometer to heat to 240°F (soft ball stage).
- Remove from heat and add the bloomed gelatin to the saucepan, stirring until fully dissolved.
- Add vanilla extract and green food coloring to desired color intensity, stirring to combine.
- Pour mixture into a greased 9×9 inch baking dish. Let it sit at room temperature for 4-6 hours, or until set.
- Once set, dust a cutting board with powdered sugar. Invert the marshmallow onto the board and cut into squares.
- Dust the cut sides with more powdered sugar to prevent sticking. Enjoy your festive St. Patrick’s Day marshmallows!
Notes
- For extra flavor, consider adding peppermint extract instead of vanilla.
- These marshmallows can be stored in an airtight container for up to 2 weeks.
