Ingredients

- 1 lb corned beef
- 4 cups water
- 1 onion, quartered
- 2 carrots, chopped
- 2 potatoes, diced
- 1/2 head of cabbage, chopped
- 2 tablespoons mustard
- Salt to taste
- Pepper to taste
Instructions
- Place corned beef in a large pot.
- Add water, onion, and bring to a boil.
- Reduce heat and simmer for 2.5 hours.
- Add carrots, potatoes, and cabbage.
- Cook for an additional 30 minutes.
- Remove meat and let it rest.
- Slice and serve with mustard.
