A refreshing vegan spring soup perfect for warm days.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups asparagus, chopped
- 1 cup peas
- 1 cup spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, and sauté until softened.
- Pour in vegetable broth and bring to a boil.
- Add asparagus and cook for 5 minutes.
- Add peas and spinach, and simmer for another 3 minutes.
- Season with salt and pepper.
- Blend soup for a smooth texture, if desired.
- Serve warm.
