Description

This delicious spinach artichoke stuffed flatbread is a perfect appetizer or light meal, combining creamy spinach and artichoke filling wrapped in warm, soft flatbread.


Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, drained and chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flatbreads
  • Olive oil, for brushing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, Greek yogurt, mozzarella cheese, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
  3. Lay the flatbreads on a clean surface. Divide the spinach artichoke mixture evenly among the flatbreads, spreading it out in the center.
  4. Fold the sides of the flatbread over the filling and roll it up tightly to enclose the stuffing.
  5. Place the rolled flatbreads seam-side down on a baking sheet lined with parchment paper.
  6. Brush the tops of the flatbreads with olive oil.
  7. Bake in the preheated oven for 15-20 minutes, or until the flatbreads are golden brown and crispy.
  8. Remove from the oven and let cool for a few minutes before slicing.
  9. Serve warm with your favorite dipping sauce.
