Description
This delicious spinach artichoke stuffed flatbread is a perfect appetizer or light meal, combining creamy spinach and artichoke filling wrapped in warm, soft flatbread.

- 1 cup fresh spinach, chopped
- 1 cup artichoke hearts, drained and chopped
- 1/2 cup cream cheese, softened
- 1/2 cup Greek yogurt
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flatbreads
- Olive oil, for brushing
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, Greek yogurt, mozzarella cheese, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
- Lay the flatbreads on a clean surface. Divide the spinach artichoke mixture evenly among the flatbreads, spreading it out in the center.
- Fold the sides of the flatbread over the filling and roll it up tightly to enclose the stuffing.
- Place the rolled flatbreads seam-side down on a baking sheet lined with parchment paper.
- Brush the tops of the flatbreads with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the flatbreads are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before slicing.
- Serve warm with your favorite dipping sauce.
Notes
- Feel free to add additional herbs or spices to the filling for extra flavor.
- For a lighter version, substitute low-fat cream cheese and Greek yogurt.
- These flatbreads can be made ahead of time and reheated in the oven before serving.
