- 2 packs of instant ramen noodles
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon sriracha (adjust for spice level)
- 1 teaspoon sesame oil
- 2 cups vegetable broth
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- 1 green onion, sliced
- 1 tablespoon chopped cilantro
- Salt and pepper to taste
Instructions
- In a pot, bring the vegetable broth to a boil.
- Add the instant ramen noodles and cook according to package instructions until tender.
- In a bowl, mix together the peanut butter, soy sauce, sriracha, sesame oil, garlic, and ginger until smooth.
- Once the noodles are cooked, drain them and return to the pot.
- Pour the peanut butter mixture over the noodles and toss to coat evenly.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions and chopped cilantro.
