Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

Instructions

  1. Season the beef chuck roast with salt and pepper on all sides.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4 to 5 minutes per side.
  3. Transfer the roast to the slow cooker.
  4. In the same skillet, add the chopped onion and garlic, cooking until softened, about 2 minutes. Add to the slow cooker.
  5. Layer the carrots and potatoes on top of the roast.
  6. In a bowl, combine the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour the mixture over the roast and vegetables.
  7. Cover the slow cooker and cook on low for 8 hours or high for 4-5 hours, until the meat is tender and shreds easily.
  8. Remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and sauce.

Notes

  • For added flavor, you can marinate the roast overnight with your favorite seasonings.
  • Feel free to add other vegetables like peas or mushrooms to the pot.
  • Leftovers can be stored in the refrigerator for up to 3 days.
