- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
Instructions
- Season the beef chuck roast with salt and pepper on all sides.
- In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4 to 5 minutes per side.
- Transfer the roast to the slow cooker.
- In the same skillet, add the chopped onion and garlic, cooking until softened, about 2 minutes. Add to the slow cooker.
- Layer the carrots and potatoes on top of the roast.
- In a bowl, combine the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour the mixture over the roast and vegetables.
- Cover the slow cooker and cook on low for 8 hours or high for 4-5 hours, until the meat is tender and shreds easily.
- Remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and sauce.
Notes
- For added flavor, you can marinate the roast overnight with your favorite seasonings.
- Feel free to add other vegetables like peas or mushrooms to the pot.
- Leftovers can be stored in the refrigerator for up to 3 days.
