- 2 zucchinis, sliced
- 1 bell pepper, cut into strips
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the sliced zucchinis, bell pepper strips, red onion wedges, and cherry tomatoes.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, oregano, salt, and pepper. Toss to coat evenly.
- Place the vegetables in a grill basket or directly on the grill grates.
- Grill for 10-15 minutes, turning occasionally, until the vegetables are tender and have grill marks.
- Remove from the grill and serve warm.
