- 1 pound scallops
- 1 bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- In a bowl, combine olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
- Add shrimp and scallops to the marinade, ensuring they are well-coated. Marinate for 30 minutes.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread shrimp, scallops, bell pepper, zucchini, and onion onto skewers, alternating ingredients.
- Place skewers on the grill and cook for 2-3 minutes on each side, or until seafood is cooked through and vegetables are tender.
- Remove from grill and let rest for a few minutes before serving.
