  • 1 pound scallops
  • 1 bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
  2. Add shrimp and scallops to the marinade, ensuring they are well-coated. Marinate for 30 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread shrimp, scallops, bell pepper, zucchini, and onion onto skewers, alternating ingredients.
  6. Place skewers on the grill and cook for 2-3 minutes on each side, or until seafood is cooked through and vegetables are tender.
  7. Remove from grill and let rest for a few minutes before serving.
